Celebrate Your Holi With Puran Poli |

The arrival of spring in India is celebrated with Holi, the festival of colors. Spring symbolizes a new beginning, a new lease of life. Holi is a way of welcoming everything that is new and auspicious and discarding the evil. The festivity has its root in Indian mythology and across India it is celebrated with enthusiasm. The riot of colors spreads love and camaraderie.
No festivity in India can be complete without sweets. So here is a dish that is widely available in India. In South India the dish is called Holige, Obbattu and Baksham. However, it is more popularly known as Puran Poli. The ingredients required for this dessert are:-
1 cup of Flour
2 tablespoon of Ghee
1 pinch of Salt
1 pinch of Turmeric Powder
6 tbsp of Oil
Separate Oil or Ghee for Frying
Adequate Water to prepare the dough
For Filler you will need
1 1/4 cup - Bengal Gram Dal
1/4 tsp - Cardamom Powder
1 1/2 cup - Jaggery
Preparation
Primarily you need to mix masala and ghee with the flour or maida. Use water with this mixture to make dough. Leave the soft dough under a wet cloth for 50-60 minutes and then knead again. Add 6 tsp of oil to it and knead again till the oil is completely absorbed. Then leave aside the dough for 4 hours. In a cooker put the gram dal in it till the cooker whistles and drain the water away. Grind the dal and make a paste with jaggery and cardamom powder. Your filling is ready.
Make small balls with the dough, flatten them and put the filling in it. Seal the doughs and then roll them into thick chapattis or puris. Be careful so that the filling does not come out. Put a frying pan on the oven. Pour oil or ghee in it and cook the rolled out doughs in it. Your Puran Poli is ready.
These can be served either with a spoonful of ghee or with almonds and pistachios. In South India they are served with a tamarind-based sauce and in Maharashtra they are teamed up with katachi amti (tangy sauce).
